Quick And Light Fettuccine Primavera

Total Time: 14 mins Preparation Time: 2 mins Cook Time: 12 mins

Ingredients

  • Servings: 6
  • 12 ounces fettuccine (try spinach or other flavors)
  • 1 (16 ounce) package frozen mixed vegetables (choose your favorite)
  • 1 teaspoon butter or 1 teaspoon margarine
  • 1 cup evaporated skim milk
  • 1/4 cup shredded parmesan cheese
  • fresh ground pepper

Recipe

  • 1 cook fettucini according to package directions; drain; return to pot.
  • 2 add butter and toss to coat.
  • 3 as pasta is cooking, cook vegetables in steamer or in the microwave, just until tender.
  • 4 add milk and parmesan cheese to fettucini; toss gently.
  • 5 add cooked vegetables and pepper to taste.
