Greek Ziti

Ingredients

- 1 cup chicken broth (low sodium works fine)
- 2 teaspoons dried oregano
- 2 teaspoons dried basil
- 2 teaspoons dried sage
- 3 chicken breasts, cut into 1/2-inch cubes
- 8 ounces ziti pasta
- 4 ounces feta cheese, crumbled
- 1 tablespoon lemon juice
- 1/2 teaspoon fresh ground black pepper
- 3 tablespoons chopped fresh parsley or 3 teaspoons dried parsley
- 1 1/2 cups cherry tomatoes, halved
Recipe
- 1 simmer broth, oregano, basil, and sage for about 4 minutes, or until only 1/2 cup of liquid remains, in a large pan with a lid.
- 2 add chicken and let it steam in the hot broth for about 8 minutes by covering the pan with the lid and removing from heat.
- 3 prepare ziti according to package directions.
- 4 drain pasta and add to chicken mixture.
- 5 toss pasta and chicken with the feta, lemon juice, pepper, and parsley.
- 6 continue mixing until cheese is melted and top with the cherry tomatoes.
