barilla plus® rotini with three peppers and herbs
Ingredients
- Servings: 4
- 1/4 cup extra-virgin olive oil
- 2 cups sliced white onion
- 2 sprigs fresh thyme, divided
- 1 (14.5 ounce) box barilla plus® rotini
- 1 cup diced green bell pepper
- 1 cup diced red bell pepper
- 1 cup diced yellow bell pepper
- 10 leaves fresh italian parsley, chopped
- salt and black pepper to taste

Cook Time: 10 mins
Ready Time: 15 mins
- bring a large pot of water to a boil.
- heat olive oil in a large skillet over medium-high heat. add onions and 1 sprig of fresh thyme. saute 5 minutes.
- cook pasta according to package directions.
- add peppers and water to skillet, season with salt and pepper. saute an additional 10 minutes or until peppers are tender.
- drain pasta, add to the skillet, and toss. sprinkle with remaining thyme, chopped parsley and serve.
