barilla plus® rotini with three peppers and herbs

Ingredients

  • Servings: 4
  • 1/4 cup extra-virgin olive oil
  • 2 cups sliced white onion
  • 2 sprigs fresh thyme, divided
  • 1 (14.5 ounce) box barilla plus® rotini
  • 1 cup diced green bell pepper
  • 1 cup diced red bell pepper
  • 1 cup diced yellow bell pepper
  • 10 leaves fresh italian parsley, chopped
  • salt and black pepper to taste

Recipe

    Preparation Time: 5 mins Cook Time: 10 mins Ready Time: 15 mins

  • bring a large pot of water to a boil.
  • heat olive oil in a large skillet over medium-high heat. add onions and 1 sprig of fresh thyme. saute 5 minutes.
  • cook pasta according to package directions.
  • add peppers and water to skillet, season with salt and pepper. saute an additional 10 minutes or until peppers are tender.
  • drain pasta, add to the skillet, and toss. sprinkle with remaining thyme, chopped parsley and serve.
