Greek Ziti

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 cup chicken broth (low sodium works fine)
  • 2 teaspoons dried oregano
  • 2 teaspoons dried basil
  • 2 teaspoons dried sage
  • 3 chicken breasts, cut into 1/2-inch cubes
  • 8 ounces ziti pasta
  • 4 ounces feta cheese, crumbled
  • 1 tablespoon lemon juice
  • 1/2 teaspoon fresh ground black pepper
  • 3 tablespoons chopped fresh parsley or 3 teaspoons dried parsley
  • 1 1/2 cups cherry tomatoes, halved

Recipe

  • 1 simmer broth, oregano, basil, and sage for about 4 minutes, or until only 1/2 cup of liquid remains, in a large pan with a lid.
  • 2 add chicken and let it steam in the hot broth for about 8 minutes by covering the pan with the lid and removing from heat.
  • 3 prepare ziti according to package directions.
  • 4 drain pasta and add to chicken mixture.
  • 5 toss pasta and chicken with the feta, lemon juice, pepper, and parsley.
  • 6 continue mixing until cheese is melted and top with the cherry tomatoes.
