Lemon Chicken Fettuccine With Snow Peas

Ingredients

- 12 ounces fettuccine
- 1 tablespoon vegetable oil
- 1 lb boneless skinless chicken breast
- 1 garlic clove
- 1 1/4 cups chicken broth
- 2 tablespoons lemon juice
- 1 tablespoon cornstarch
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 cups snow peas (fresh is best)
- 2 tablespoons chopped fresh parsley
Recipe
- 1 cut chicken into 1" pieces. mince the garlic.
- 2 cook pasta according to package directions. drain and keep warm.
- 3 heat oil in a large skillet over medium-high heat. add chicken and garlic and cook, stirring frequently, for about 5 minutes until browned. reduce heat to medium.
- 4 in a bowl, whisk together the broth, lemon juice, cornstarch, salt and pepper. add to chicken in skillet. heat to boiling; reduce heat and simmer about 2 minutes, until thickened, stirring frequently.
- 5 add snow peas and cook 3 minutes longer.
- 6 toss hot pasta with sauce and garnish with parsley.
