Pasta Salad, Greek Style

Total Time: 1 hr 15 mins Preparation Time: 30 mins Cook Time: 45 mins

Ingredients

  • Servings: 6
  • 1 lb rotini noodles
  • 1 lb boneless chicken breast
  • 3 stalks celery, chopped
  • 1 sweet red pepper, chopped
  • 1 (2 1/4 ounce) can sliced black olives
  • 1 (4 ounce) package feta cheese, drained and crumbled
  • 3 green onions, finely sliced
  • 1 (16 ounce) bottle greek salad dressing

Recipe

  • 1 cook chicken in water to cover with 1 bay leaf.
  • 2 bring to boil and cook for 30 minute or until juices run clear.
  • 3 cool and remove skins.
  • 4 or, you can cook chicken in frying pan until cooked through.
  • 5 cut into bite size pieces.
  • 6 cook noodles and drain.
  • 7 add all ingredients and mix well.
  • 8 i use only about half the bottle of dressing and then put the rest on the table if someone wants more.
  • 9 serve warm or cold.
