Pistachio Cream Sauce

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1/4 cup unsalted pistachio nuts, ground coarsely
  • 1/2 medium onion, chopped
  • 2 tablespoons olive oil
  • 1/2 cup heavy cream
  • 1/2 cup parmigiano-reggiano cheese, grated
  • salt, to taste
  • pepper
  • crushed red pepper flakes

Recipe

  • 1 heat oil in medium sauté pan.
  • 2 sauté onions until translucent (not caramelized).
  • 3 add pistachios and enough olive oil to lightly coat.
  • 4 cook for about a minute, the pistachios should not change color.
  • 5 add cream until heated throughout.
  • 6 remove from heat.
  • 7 add seasonings to taste.
  • 8 serve over pasta of choice.
  • 9 top with grated cheese.
