Pistachio Cream Sauce

Ingredients

- 1/4 cup unsalted pistachio nuts, ground coarsely
- 1/2 medium onion, chopped
- 2 tablespoons olive oil
- 1/2 cup heavy cream
- 1/2 cup parmigiano-reggiano cheese, grated
- salt, to taste
- pepper
- crushed red pepper flakes
Recipe
- 1 heat oil in medium sauté pan.
- 2 sauté onions until translucent (not caramelized).
- 3 add pistachios and enough olive oil to lightly coat.
- 4 cook for about a minute, the pistachios should not change color.
- 5 add cream until heated throughout.
- 6 remove from heat.
- 7 add seasonings to taste.
- 8 serve over pasta of choice.
- 9 top with grated cheese.
