Lemon Chicken Orzo Soup

Total Time: 55 mins Preparation Time: 10 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 8 cups chicken stock
  • 3/4 cup orzo pasta
  • 1/2 lb boneless skinless chicken breast, cut crosswise into 1/4-inch thick pieces
  • 3 eggs
  • 1/3 cup fresh lemon juice
  • 1 tablespoon grated lemon zest
  • salt and pepper
  • 2 tablespoons finely chopped parsley

Recipe

  • 1 in a large saucepan, bring the chicken stock to a boil.
  • 2 reduce heat to medium-low and add orzo.
  • 3 cook uncovered until tender, about 15 to 20 minutes.
  • 4 five minutes before pasta is done, add chicken.
  • 5 whisk eggs while adding lemon juice.
  • 6 stir in zest. whisking constantly.
  • 7 slowly pour a ladle of the hot stock into the egg mixture to temper.
  • 8 reduce heat to low and while stirring add the egg mixture to the soup(soup should thicken slightly).
  • 9 add salt and pepper and garnish with parsley.
