Lemon Chicken Orzo Soup

Ingredients

- 8 cups chicken stock
- 3/4 cup orzo pasta
- 1/2 lb boneless skinless chicken breast, cut crosswise into 1/4-inch thick pieces
- 3 eggs
- 1/3 cup fresh lemon juice
- 1 tablespoon grated lemon zest
- salt and pepper
- 2 tablespoons finely chopped parsley
Recipe
- 1 in a large saucepan, bring the chicken stock to a boil.
- 2 reduce heat to medium-low and add orzo.
- 3 cook uncovered until tender, about 15 to 20 minutes.
- 4 five minutes before pasta is done, add chicken.
- 5 whisk eggs while adding lemon juice.
- 6 stir in zest. whisking constantly.
- 7 slowly pour a ladle of the hot stock into the egg mixture to temper.
- 8 reduce heat to low and while stirring add the egg mixture to the soup(soup should thicken slightly).
- 9 add salt and pepper and garnish with parsley.
