Quick And Easy Saffron Rice

Total Time: 33 mins Preparation Time: 15 mins Cook Time: 18 mins

Ingredients

  • Servings: 3
  • 1 1/2 tablespoons olive oil
  • 1/4 cup onion, diced
  • 1/2 teaspoon garlic, minced
  • 1 cup rice
  • 1 1/2 cups chicken broth
  • 1/2 teaspoon saffron
  • 1 1/2 teaspoons parsley, chopped

Recipe

  • 1 heat the oil in a heavy saucepan (that has a lid).
  • 2 add the onion and garlic and cook until just soft.
  • 3 add in the rice and cook for 3 minutes, stirring frequently.
  • 4 add the broth, saffron, and parsley.
  • 5 cover and reduce the heat to low.
  • 6 cook for 15-18 minutes or until the liquid is absorbed.
  • 7 fluff with a fork before serving.
