Quick And Easy Saffron Rice

Ingredients

- 1 1/2 tablespoons olive oil
- 1/4 cup onion, diced
- 1/2 teaspoon garlic, minced
- 1 cup rice
- 1 1/2 cups chicken broth
- 1/2 teaspoon saffron
- 1 1/2 teaspoons parsley, chopped
Recipe
- 1 heat the oil in a heavy saucepan (that has a lid).
- 2 add the onion and garlic and cook until just soft.
- 3 add in the rice and cook for 3 minutes, stirring frequently.
- 4 add the broth, saffron, and parsley.
- 5 cover and reduce the heat to low.
- 6 cook for 15-18 minutes or until the liquid is absorbed.
- 7 fluff with a fork before serving.
