Low-fat Linguine With Tomatoes And 'cream'

Ingredients

- 2 teaspoons olive oil
- 1 cup chopped onion
- 1 clove garlic, minced (or more)
- 1 (1 lb) can stewed tomatoes
- 1 teaspoon dried basil
- 1/8 teaspoon pepper
- 1/2 cup evaporated skim milk
- 8 ounces linguine
- 3 tablespoons grated parmesan cheese
Recipe
- 1 heat oil in a large nonstick skillet over medium heat.
- 2 add onions and garlic.
- 3 cook 5 minutes, stirring frequently.
- 4 add stewed tomatoes, basil, and pepper; bring to boiling.
- 5 reduce heat to low and simmer, uncovered, for 10 minutes.
- 6 stir in milk and continue to simmer 5 minutes more.
- 7 while sauce is cooking, prepare linguine according to package directions; drain.
- 8 add cooked linguine to tomato mixture, along with parmesan cheese.
- 9 toss until pasta is coated with sauce.
