Rice And Veggie Pilaf

Ingredients
- Servings: 6
- 1 teaspoon olive oil
- 1/4 cup orzo pasta
- 1 cup long grain rice
- 2 1/2 cups chicken broth
- salt and pepper
- 1 small yellow onion, chopped
- 2 stalks celery, chopped
- 1/4 cup mushroom, chopped
Recipe
- 1 heat oil in a pan over medium heat.
- 2 add orzo and rice and cook until grains look clear.
- 3 add chicken broth, salt, and pepper.
- 4 bring to a boil.
- 5 reduce heat, cover and simmer for 15 minutes.
- 6 spray a separate pan with a little cooking spray.
- 7 saute chopped vegetables for about 3 - 5 minutes.
- 8 after the rice has finished cooking, mix sauted vegetables with rice.
- 9 cover and cook for 5 more minutes.
