Pancakes On The Go

Total Time: 10 mins Preparation Time: 10 mins

Ingredients

  • 1/2 cup flour
  • 1/2 cup whole wheat flour
  • 1/2 cup plus 2 tablespoons quick oats
  • 1/3 cup packed brown sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 egg
  • 1 1/3 cups buttermilk
  • 2 tablespoons vegetable oil

Recipe

  • 1 combine all the dry ingredients in a mixing bowl.
  • 2 in another bowl beat egg, buttermilk, and oil.
  • 3 stir into dry ingredients and mix well.
  • 4 pour batter by 1/3 cupfulls onto a lightly greased, hot griddle. turn when bubbles form on the tops of the pancakes. cook until other side is golden brown.
  • 5 serve lightly buttered, or with syrup, or just plain!
