Lobster Ravioli With Saffron Cream Sauce

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 2 (9 ounce) packages trader joes lobster ravioli
  • 2 tablespoons butter
  • 1 shallot, minced
  • 1/2 cup dry wine
  • 2 pinches saffron threads
  • 2 cups whipping cream
  • cayenne pepper, to taste
  • salt and pepper
  • fresh chives, for garnish

Recipe

  • 1 make the pasta according to directions --
  • 2 while waiting for the water to boil, make the sauce:
  • 3 add butter to a saute pan over medium-low heat. add the shallot and cook for 2-3 minutes or until translucent.
  • 4 add the wine, stirring until the wine evaporates, about 3 minutes.
  • 5 add the cream and saffron, lower heat and simmer.
  • 6 cook until the sauce has reduced by half, about 10 minutes. season with salt and pepper and remove from heat.
  • 7 add the cooked ravioli to the saute pan and stir to coat.
  • 8 add the ravioli to a plate and spoon with more sauce. garnish with a little cayenne pepper if you like some heat and some chives.
