Fantastically Healthy Pesto

Total Time: 10 mins Preparation Time: 10 mins

Ingredients

  • Servings: 4
  • 4 cups spinach leaves (one large bag, or may sub. basil)
  • 1 cup almonds (toasted or untoasted)
  • 2 garlic cloves
  • 2 tablespoons miso
  • 2 tablespoons wine vinegar
  • 2 tablespoons nutritional yeast, also known as brewer's yeast
  • 1/2 cup olive oil
  • salt and pepper

Recipe

  • 1 in your food processor, place the almonds and garlic cloves. chop until a course grind is achieved.
  • 2 add spinach by the handful and continue to work until a paste forms.
  • 3 add miso, wine vinegar and nutritional yeast.
  • 4 stream in olive oil while processor runs until desired consistency is achieved.
  • 5 season with salt and pepper as desired.
  • 6 serve immediately or warmed over any pasta.
