Fantastically Healthy Pesto

Ingredients
- Servings: 4
- 4 cups spinach leaves (one large bag, or may sub. basil)
- 1 cup almonds (toasted or untoasted)
- 2 garlic cloves
- 2 tablespoons miso
- 2 tablespoons wine vinegar
- 2 tablespoons nutritional yeast, also known as brewer's yeast
- 1/2 cup olive oil
- salt and pepper
Recipe
- 1 in your food processor, place the almonds and garlic cloves. chop until a course grind is achieved.
- 2 add spinach by the handful and continue to work until a paste forms.
- 3 add miso, wine vinegar and nutritional yeast.
- 4 stream in olive oil while processor runs until desired consistency is achieved.
- 5 season with salt and pepper as desired.
- 6 serve immediately or warmed over any pasta.
