Ingredients

- 3 tablespoons olive oil
- 1 lb mushroom
- 1 large onion
- 1 tablespoon garlic, minced
- salt and pepper
- 1 (28 ounce) can plum tomatoes, with their liquid, chopped
- 1 lb ziti pasta
- 1 lb mozzarella cheese, shredded
Recipe
- 1 bring a large pot of salted water to a boil. heat oven to 400 degrees.
- 2 in a large skillet over medium high heat place olive oil, adding mushrooms and cooking until brown, about 5 minutes.
- 3 add the onion and garlic; sprinkle with salt and pepper.
- 4 lower heat to medium and continue to cook, stirring occasionally until veggies are soft, about 2 minutes.
- 5 add tomatoes and simmer.
- 6 meanwhile, cook pasta until just tender, it should still be too firm to eat.
- 7 drain and toss with the sauce and about half the mozzarella.
- 8 grease a large baking dish and pour the mixture into it.
- 9 top with remaining mozzarella and bake until top is browned and cheese is bubbling, 20-30 minutes.
