Men's Health Baked Ziti

Total Time: 35 mins Preparation Time: 5 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 3 tablespoons olive oil
  • 1 lb mushroom
  • 1 large onion
  • 1 tablespoon garlic, minced
  • salt and pepper
  • 1 (28 ounce) can plum tomatoes, with their liquid, chopped
  • 1 lb ziti pasta
  • 1 lb mozzarella cheese, shredded

Recipe

  • 1 bring a large pot of salted water to a boil. heat oven to 400 degrees.
  • 2 in a large skillet over medium high heat place olive oil, adding mushrooms and cooking until brown, about 5 minutes.
  • 3 add the onion and garlic; sprinkle with salt and pepper.
  • 4 lower heat to medium and continue to cook, stirring occasionally until veggies are soft, about 2 minutes.
  • 5 add tomatoes and simmer.
  • 6 meanwhile, cook pasta until just tender, it should still be too firm to eat.
  • 7 drain and toss with the sauce and about half the mozzarella.
  • 8 grease a large baking dish and pour the mixture into it.
  • 9 top with remaining mozzarella and bake until top is browned and cheese is bubbling, 20-30 minutes.
