Pasta Tomato Carbonara

Ingredients
- Servings: 6
- 1 (16 ounce) package bacon
- 1/2 cup chopped onion
- 2 garlic cloves, minced
- 2 (28 ounce) cans petite diced tomatoes, with liquid
- 2 tablespoons dried basil leaves
- 2 teaspoons salt
- 1 (16 ounce) package spaghetti or 1 (16 ounce) package your favorite pasta, uncooked
Recipe
- 1 cook bacon in large skillet until crisp; drain on paper towels, reserving drippings.
- 2 drain off part of the drippings, leaving enough to saute the garlic and onion.
- 3 crumble bacon; set aside.
- 4 stir the onion and garlic into the bacon drippings. cook until onion is tender but not brown.
- 5 add tomatoes with liquid, basil, and salt. bring to a boil over medium heat. (a splash of red wine added here certainly does no harm!).
- 6 reduce heat; simmer 20 minutes, stirring occasionally.
- 7 cook pasta according to package directions.
- 8 add tomato mixture and reserved crumbled bacon to pasta; toss lightly and enjoy!
