Pasta Tomato Carbonara

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 1 (16 ounce) package bacon
  • 1/2 cup chopped onion
  • 2 garlic cloves, minced
  • 2 (28 ounce) cans petite diced tomatoes, with liquid
  • 2 tablespoons dried basil leaves
  • 2 teaspoons salt
  • 1 (16 ounce) package spaghetti or 1 (16 ounce) package your favorite pasta, uncooked

Recipe

  • 1 cook bacon in large skillet until crisp; drain on paper towels, reserving drippings.
  • 2 drain off part of the drippings, leaving enough to saute the garlic and onion.
  • 3 crumble bacon; set aside.
  • 4 stir the onion and garlic into the bacon drippings. cook until onion is tender but not brown.
  • 5 add tomatoes with liquid, basil, and salt. bring to a boil over medium heat. (a splash of red wine added here certainly does no harm!).
  • 6 reduce heat; simmer 20 minutes, stirring occasionally.
  • 7 cook pasta according to package directions.
  • 8 add tomato mixture and reserved crumbled bacon to pasta; toss lightly and enjoy!
