Pasta With Asparagus Lemon And Prosciutto

Ingredients

- 1 (9 ounce) package fresh fettuccine
- 2 teaspoons olive oil
- asparagus (about 1 1/2 pounds)
- 2 teaspoons grated lemon rind
- 2 tablespoons fresh lemon juice
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 4 ounces very thin slices prosciutto, coarsely chopped
- 3/4 cup grated fresh parmesan cheese
Recipe
- 1 cook pasta according to package directions, omitting salt and fat.
- 2 while pasta cooks, heat oil in a large nonstick skillet over medium heat. add asparagus and next 4 ingredients (asparagus through salt).
