Pasta With Asparagus Lemon And Prosciutto

Ingredients

  • Servings: 4
  • 1 (9 ounce) package fresh fettuccine
  • 2 teaspoons olive oil
  • asparagus (about 1 1/2 pounds)
  • 2 teaspoons grated lemon rind
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 4 ounces very thin slices prosciutto, coarsely chopped
  • 3/4 cup grated fresh parmesan cheese

Recipe

  • 1 cook pasta according to package directions, omitting salt and fat.
  • 2 while pasta cooks, heat oil in a large nonstick skillet over medium heat. add asparagus and next 4 ingredients (asparagus through salt).
  • 3 cover and cook 5 minutes or until tender, stirring occasionally. stir in prosciutto; cook, uncovered, for 1 minute.
