Rice Pudding With Macadamia-maple Brittle

Ingredients

  • 6 cups milk
  • 1 cup sugar, divided
  • 2 tablespoons unsalted butter
  • 1 cup medium grain rice
  • 2 three inch cinnamon sticks
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1/3 cup maple syrup
  • 1/4 cup chopped macadamia nuts, toasted

Recipe

  • 1 in a 4-quart saucepan, bring milk, 3/4 cup sugar, and the butter to a boil over medium-high heat, stirring until sugar dissolves.
  • 2 add rice and cinnamon sticks; return mixture to a boil.
