Rice With Mushrooms

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 1 tablespoon olive oil (i use a little more if needed)
  • 6 mushrooms, choppped
  • 3 garlic cloves, minced
  • 1 green onion, chopped
  • 2 cups low sodium chicken broth
  • 1 cup uncooked brown rice
  • 1/2 teaspoon chopped fresh parsley
  • salt and pepper (i use garlic salt and garlic pepper)

Recipe

  • 1 cook mushrooms, garlic and green onion in oil over medium heat until mushrooms are cooked.
  • 2 stir in chicken broth and rice.
  • 3 season with parsley, salt and pepper.
  • 4 reduce heat, cover and simmer for 20 minutes.
