Pasta With Avocado Pesto

Ingredients
- Servings: 8
- 16 ounces pasta (any kind will do)
- 2 large avocados, peeled and pitted
- 3 cloves garlic (or more)
- 3 tablespoons fresh lemon juice
- 1 cup packed cilantro
- 1 large tomato, peeled and chopped fine
- 1/3 cup parmesan cheese, to taste
Recipe
- 1 cook pasta until al dente.
- 2 combine avocado, garlic, lemon juice and cilantro in a food processor.
- 3 process about 1 minute or until smooth.
- 4 stir in chopped tomatoes.
- 5 drain pasta and pour pesto over it tossing well.
- 6 sprinkle with parmesan cheese.
