Pasta With Avocado Pesto

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 8
  • 16 ounces pasta (any kind will do)
  • 2 large avocados, peeled and pitted
  • 3 cloves garlic (or more)
  • 3 tablespoons fresh lemon juice
  • 1 cup packed cilantro
  • 1 large tomato, peeled and chopped fine
  • 1/3 cup parmesan cheese, to taste

Recipe

  • 1 cook pasta until al dente.
  • 2 combine avocado, garlic, lemon juice and cilantro in a food processor.
  • 3 process about 1 minute or until smooth.
  • 4 stir in chopped tomatoes.
  • 5 drain pasta and pour pesto over it tossing well.
  • 6 sprinkle with parmesan cheese.
