Red Beans & Brown Rice

Total Time: 1 hr Preparation Time: 10 mins Cook Time: 50 mins

Ingredients

  • Servings: 4
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 rib celery, diced
  • 1 carrot, diced
  • 1 green pepper, diced
  • 1 cup brown rice
  • 1 (15 ounce) can kidney beans
  • 1 (14 ounce) can diced tomatoes
  • 1 cup chicken broth
  • 1 tablespoon chili powder
  • 2 teaspoons thyme
  • 2 teaspoons cumin
  • salt and pepper

Recipe

  • 1 saute garlic and veggies until soft.
  • 2 add rice and spices, stir.
  • 3 add tomatoes and broth and bring to a boil.
  • 4 reduce and simmer until rice is almost done.
  • 5 add beans, salt and pepper.
  • 6 cook until done.
