Red Beans & Brown Rice

Ingredients
- Servings: 4
- 1 onion, diced
- 3 cloves garlic, minced
- 1 rib celery, diced
- 1 carrot, diced
- 1 green pepper, diced
- 1 cup brown rice
- 1 (15 ounce) can kidney beans
- 1 (14 ounce) can diced tomatoes
- 1 cup chicken broth
- 1 tablespoon chili powder
- 2 teaspoons thyme
- 2 teaspoons cumin
- salt and pepper
Recipe
- 1 saute garlic and veggies until soft.
- 2 add rice and spices, stir.
- 3 add tomatoes and broth and bring to a boil.
- 4 reduce and simmer until rice is almost done.
- 5 add beans, salt and pepper.
- 6 cook until done.
