Italian Tomato Sauce

Ingredients

- 2 -3 tablespoons olive oil
- 2 cups onions, chopped
- 1 green bell pepper, diced
- 2 teaspoons basil
- 1 teaspoon oregano
- 1 teaspoon thyme
- 1 1/2 teaspoons salt
- 1 (29 ounce) can tomatoes
- 1 (6 ounce) can tomato paste
- 1 tablespoon honey
- 1/2 teaspoon black pepper, to taste
- 4 -6 large garlic cloves, mince
Recipe
- 1 heat the olive oil in a kettle. add onion, bell pepper, herbs and salt. saute over medium heat until the onion is very soft (8 to 10 minutes).
- 2 add tomatoes, tomato paste, honey and black pepper. use a spoon to break up the tomatoes into bite size pieces. bring to a boil, then lower heat and simmer, partially covered, for 20 - 30 minutes.
- 3 add garlic and cook 10 minutes more.
- 4 serve over pasta or anywhere tomato sauce is called for.
