Italian Tomato Sauce

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 2 -3 tablespoons olive oil
  • 2 cups onions, chopped
  • 1 green bell pepper, diced
  • 2 teaspoons basil
  • 1 teaspoon oregano
  • 1 teaspoon thyme
  • 1 1/2 teaspoons salt
  • 1 (29 ounce) can tomatoes
  • 1 (6 ounce) can tomato paste
  • 1 tablespoon honey
  • 1/2 teaspoon black pepper, to taste
  • 4 -6 large garlic cloves, mince

Recipe

  • 1 heat the olive oil in a kettle. add onion, bell pepper, herbs and salt. saute over medium heat until the onion is very soft (8 to 10 minutes).
  • 2 add tomatoes, tomato paste, honey and black pepper. use a spoon to break up the tomatoes into bite size pieces. bring to a boil, then lower heat and simmer, partially covered, for 20 - 30 minutes.
  • 3 add garlic and cook 10 minutes more.
  • 4 serve over pasta or anywhere tomato sauce is called for.
