Rice Pilaf

Ingredients
- 2 cups chopped scallions
- 3 tablespoons butter
- 1 1/2 cups uncooked long grain rice
- 3 cups liquid (water,chicken broth or a combo of both)
- 1 1/2 cups shredded carrots
- 1/2 teaspoon dried thyme
- 1/2 teaspoon salt
- parsley, if desired
Recipe
- 1 saute scallions in butter over low heat; add rice, stirring to coat all grains. add remainder of ingredients except parsley. bring to a boil; lower heat and cook, covered, for 20 minutes. when done, toss with parsley, if desired.
