Rice Pilaf

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • 2 cups chopped scallions
  • 3 tablespoons butter
  • 1 1/2 cups uncooked long grain rice
  • 3 cups liquid (water,chicken broth or a combo of both)
  • 1 1/2 cups shredded carrots
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • parsley, if desired

Recipe

  • 1 saute scallions in butter over low heat; add rice, stirring to coat all grains. add remainder of ingredients except parsley. bring to a boil; lower heat and cook, covered, for 20 minutes. when done, toss with parsley, if desired.
