Pistachio Cream Pasta

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 8
  • 2 cups mushrooms, sliced
  • 1/3 cup butter
  • 1/2 cup heavy cream
  • 1/2 teaspoon basil, crushed
  • 8 ounces pasta, cooked
  • 1 cup fresh spinach, torn in bite size pieces
  • 1/4 cup parmesan cheese, grated
  • 1/4 cup swiss cheese, shredded
  • 1/2 cup pistachios, chopped

Recipe

  • 1 in a skillet, saute mushrooms in butter.
  • 2 add cream and basil and heat through.
  • 3 pour sauce over hot pasta and mix thoroughly.
  • 4 add spinach, parmesan and swiss cheeses, pistachios.
  • 5 season to taste with salt and pepper.
  • 6 toss to mix well.
