Rice Salad

Ingredients

  • Servings: 4
  • 2 1/2 cups cooked rice
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 (7 ounce) can whole kernel corn, drained
  • 1/2 cup red bell pepper, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 1/2 teaspoons cilantro leaves
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder

Recipe

  • 1 mix rice, beans, corn and bell pepper in a large bowl.
  • 2 whisk olive oil, lemon juice, cilantro leaves, salt, chili powder and garlic powder in a small bowl until blended.
  • 3 add to rice mixture and toss.
  • 4 can be made a day in advance.
