Rice Pudding

Ingredients

  • Servings: 6
  • 1/2 cup long grain rice, uncooked
  • 3/4 cup light brown sugar
  • 2 1/2 cups water
  • 1 vanilla bean, split
  • 1 1/2 cups 2% low-fat milk
  • 1/2 cup raisins (optional) or 1/2 cup sultana, soaked in (optional)
  • rum, for 30 minutes
  • 1/2 teaspoon cinnamon

Recipe

  • 1 combine rice, brown sugar, water and vanilla bean in a medium sauce pan.
  • 2 bring mixture to a boil, then reduce to a simmer until all the liquid has been absorbed, about 45 minutes.
  • 3 carefully remove vanilla bean. scrape out the seeds and stir them into the rice.
  • 4 stir in cream and, keeping rice over low heat, bring to a simmer.
  • 5 remove pudding when it begins to bubble, after 20-30 minutes.
  • 6 stir in raisins.
  • 7 transfer pudding to a medium bowl or individual serving dishes, sprinkle with cinnamon. refrigerate until chilled and ready to serve.
