Rice Pilaf With Carrots

Ingredients

- 1 tablespoon oil
- 2 cups long grain rice, uncooked
- 1/4 cup onion, chopped
- 2 garlic cloves, minced
- 4 cups chicken broth
- 1/2 teaspoon salt
- 1 cup carrot, finely chopped
- 1/4 cup green onion, chopped
- 3 tablespoons pine nuts or 3 tablespoons pecans, toasted
Recipe
- 1 heat oil in a medium saucepan over medium-high heat.
- 2 add the rice and onion; sautè 2 minutes.
- 3 add the garlic; sautè 1 minute.
- 4 add the broth and salt; bring to a boil.
- 5 cover, reduce heat and simmer 7 minutes.
- 6 stir in carrots; cover and cook an additional 7 minutes or until liquid is absorbed.
- 7 remove from heat; stir in green onion and nuts.
- 8 cover and let stand for 5 minutes.
