Eggplant Roll-ups (ww 5 Points)

Ingredients
- Servings: 4
- 1 eggplant, peeled, sliced 1/4 inch thick lengthwise
- 4 tablespoons shallots, chopped
- 4 garlic cloves
- 1 1/2 cups tomato and basil pasta sauce
- 1 tablespoon extra virgin olive oil
- 6 pieces laughing cow light swiss cheese, 6 wedges
- 10 leaves fresh basil, shredded
- 1/2 cup parmesan cheese, grated
Recipe
- 1 peel and slice eggplant.
- 2 broil eggplant on on baking sheet until golden on both sides (15 mins).
- 3 saute shallots & garlic until soft.
- 4 add tomato & basil sauce.
- 5 transfer to baking dish.
- 6 place 1 wedge of cheese and a basil leaf on one end of eggplant slice. roll up.
- 7 lay seam side down in sauce.
- 8 top with parmesan.
- 9 bake 10 to 15 minutes.
