Eggplant Roll-ups (ww 5 Points)

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 1 eggplant, peeled, sliced 1/4 inch thick lengthwise
  • 4 tablespoons shallots, chopped
  • 4 garlic cloves
  • 1 1/2 cups tomato and basil pasta sauce
  • 1 tablespoon extra virgin olive oil
  • 6 pieces laughing cow light swiss cheese, 6 wedges
  • 10 leaves fresh basil, shredded
  • 1/2 cup parmesan cheese, grated

Recipe

  • 1 peel and slice eggplant.
  • 2 broil eggplant on on baking sheet until golden on both sides (15 mins).
  • 3 saute shallots & garlic until soft.
  • 4 add tomato & basil sauce.
  • 5 transfer to baking dish.
  • 6 place 1 wedge of cheese and a basil leaf on one end of eggplant slice. roll up.
  • 7 lay seam side down in sauce.
  • 8 top with parmesan.
  • 9 bake 10 to 15 minutes.
