Pasta With Beans And Spinach Parmesan

Total Time: 35 mins Preparation Time: 20 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 2 cups elbow macaroni (8oz)
  • 1 cup thinly sliced onion
  • 1 tablespoon minced garlic
  • 1 tablespoon olive oil
  • 1 tablespoon water
  • 6 cups fresh spinach leaves
  • 3 tomatoes, seeded & chopped
  • 1 (15 ounce) can cannellini beans, rinsed & drained
  • 1/3 cup grated parmesan cheese

Recipe

  • 1 cook pasta until just tender.
  • 2 ladle 1 cup of pasta cooking liquid into bowl and reserve.
  • 3 drain pasta.
  • 4 saute onion& garlic in oil, then add 1 t water to skillet& cook over medium heat until onion is golden and tender, stirring often.
  • 5 add 1 c reserved pasta cooking liquid, spinach& tomatoes to skillet.
  • 6 cover& cook until spinach wilts, about 3 minutes.
  • 7 add cannellini beans& pasta.
  • 8 cover& cook until heated, about 2 minutes.
  • 9 stir in cheese& season with salt& pepper.
