Pasta With Beans And Spinach Parmesan

Ingredients
- Servings: 4
- 2 cups elbow macaroni (8oz)
- 1 cup thinly sliced onion
- 1 tablespoon minced garlic
- 1 tablespoon olive oil
- 1 tablespoon water
- 6 cups fresh spinach leaves
- 3 tomatoes, seeded & chopped
- 1 (15 ounce) can cannellini beans, rinsed & drained
- 1/3 cup grated parmesan cheese
Recipe
- 1 cook pasta until just tender.
- 2 ladle 1 cup of pasta cooking liquid into bowl and reserve.
- 3 drain pasta.
- 4 saute onion& garlic in oil, then add 1 t water to skillet& cook over medium heat until onion is golden and tender, stirring often.
- 5 add 1 c reserved pasta cooking liquid, spinach& tomatoes to skillet.
- 6 cover& cook until spinach wilts, about 3 minutes.
- 7 add cannellini beans& pasta.
- 8 cover& cook until heated, about 2 minutes.
- 9 stir in cheese& season with salt& pepper.
