Preppy Bow Ties With Chicken

Ingredients

  • Servings: 4
  • 8 ounces packaged dried bow tie pasta
  • 8 ounces boneless skinless chicken breast halves, cut into thin strips
  • 1 tablespoon olive oil or 1 tablespoon cooking oil
  • 2 cups sliced fresh mushrooms
  • 1 medium sweet red pepper, chopped
  • 3 garlic cloves, minced
  • 4 teaspoons cornstarch
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried oregano, crushed
  • 1/4 teaspoon black pepper
  • 1 1/2 cups milk
  • 1 (10 ounce) package frozen chopped spinach, thawed and well-drained
  • 2 ounces thinly sliced turkey pepperoni, cut in half or 1/2 cup turkey pepperoni
  • 1/4 cup grated parmesan cheese or 1 ounce parmesan cheese

Recipe

  • 1 in a very large saucepan or pot, cook pasta according to package directions. drain and return to saucepan. keep warm.
  • 2 meanwhile, in a large skillet, cook and stir chicken in hot oil for 2 or 3 minutes or until tender and no longer pink. remove chicken, reserve drippings in skillet.
  • 3 cook and stir mushrooms, red pepper, and garlic in skillet drippings over medium heat for 4 to 5 minutes or until tender.
  • 4 stir in cornstarch, salt, oregano and black pepper. add milk. cook and stir until slightly thickened and bubbly; cook and stir 1 minute more.
  • 5 stir in chicken, spinach, pepperoni, and parmesan cheese; heat through.
  • 6 pour over cooked pasta; toss to coat. makes 4 to 6 servings.
