Quinoa Black Bean

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 teaspoon olive oil
  • 1 onion, ghopped
  • 3 garlic cloves, pealed and pressed
  • 3/4 cup uncooked quinoa
  • 1 1/2 cups chicken broth
  • 1 teaspoon ground cumin
  • 1 green pepper, chopped
  • 1 chili pepper, chopped
  • 1 (15 1/4 ounce) can corn
  • 2 (15 ounce) cans black beans, drained (or dried beans cooked)

Recipe

  • 1 heat oil in medium sauce pan over medium heat.
  • 2 stir in onion, garlic, pepper, and chili cook until translucent.
  • 3 mix quinoa in sauce pan and cover with broth.
  • 4 add cumin, salt and pepper.
  • 5 bring to boil.
  • 6 cover and simmer for 20 minute.
  • 7 stir in corn and black beans and heat through.
  • 8 add cilantro.
