Quinoa Black Bean

Ingredients
- Servings: 4
- 1 teaspoon olive oil
- 1 onion, ghopped
- 3 garlic cloves, pealed and pressed
- 3/4 cup uncooked quinoa
- 1 1/2 cups chicken broth
- 1 teaspoon ground cumin
- 1 green pepper, chopped
- 1 chili pepper, chopped
- 1 (15 1/4 ounce) can corn
- 2 (15 ounce) cans black beans, drained (or dried beans cooked)
Recipe
- 1 heat oil in medium sauce pan over medium heat.
- 2 stir in onion, garlic, pepper, and chili cook until translucent.
- 3 mix quinoa in sauce pan and cover with broth.
- 4 add cumin, salt and pepper.
- 5 bring to boil.
- 6 cover and simmer for 20 minute.
- 7 stir in corn and black beans and heat through.
- 8 add cilantro.
