Quinoa Pilaf

Ingredients
- Servings: 6
- 1/2 cup carrot, diced
- 1/2 cup green onion, diced
- 1/4 cup celery, diced
- 1/4 cup green pepper, diced
- 1/4 cup red pepper, diced
- 6 cups quinoa, cooked as per packet
- 1/4 cup butter (or olive oil)
- 2 garlic cloves, crushed
- 1 cup almonds, sliced
- 1/4 teaspoon oregano
- salt
Recipe
- 1 saute vegetables in butter or oil until crisp.
- 2 stir in oregano.
- 3 add sauteed vegetables to cooked quinoa and mix well.
- 4 salt to taste.
- 5 add almonds.
