Quinoa Pilaf

Ingredients

  • Servings: 6
  • 1/2 cup carrot, diced
  • 1/2 cup green onion, diced
  • 1/4 cup celery, diced
  • 1/4 cup green pepper, diced
  • 1/4 cup red pepper, diced
  • 6 cups quinoa, cooked as per packet
  • 1/4 cup butter (or olive oil)
  • 2 garlic cloves, crushed
  • 1 cup almonds, sliced
  • 1/4 teaspoon oregano
  • salt

Recipe

  • 1 saute vegetables in butter or oil until crisp.
  • 2 stir in oregano.
  • 3 add sauteed vegetables to cooked quinoa and mix well.
  • 4 salt to taste.
  • 5 add almonds.
