Quinoa "rice" Pudding

Total Time: 46 mins Preparation Time: 2 mins Cook Time: 44 mins

Ingredients

  • 1 cup uncooked quinoa
  • 2 cups water
  • 1 1/2 cups nonfat milk, divided
  • 1/4 cup sugar
  • 1/2 cup raisins (optional)
  • 1 egg
  • 1/2 cup milk
  • 2 teaspoons vanilla
  • 2 tablespoons unsalted butter

Recipe

  • 1 bring the quinoa and water to a boil, cover and reduce heat, cook for 20 minutes or until quinoa is done.
  • 2 stir 1 1/2 cup milk and sugar into the quinoa and cook until thick and creamy, about 20 minutes. if using raisins add in the last few minutes.
  • 3 combine 1/2 cup of the milk with egg, beat well. stir into quinoa mixture and cook, over low heat, for two more minutes.
  • 4 remove from heat, stir in the butter and vanilla.
