Rice Pilaf With Pine Nuts

Ingredients

- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 1 cup long-grain rice,
- 1 1/2 cups chicken broth
- 1/2 cup pine nuts
Recipe
- 1 heat oil in small saucepan over medium-high heat. saute onion until soft, about 5 minutes.
- 2 stir in uncooked rice.
- 3 add broth and bring to a boil.
- 4 reduce heat to low and cover. simmer until rice is done, about 20 minutes.
- 5 fluff rice with fork and add pine nuts.
- 6 season with salt and pepper.
