Rice Pilaf With Pine Nuts

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 1 cup long-grain rice,
  • 1 1/2 cups chicken broth
  • 1/2 cup pine nuts

Recipe

  • 1 heat oil in small saucepan over medium-high heat. saute onion until soft, about 5 minutes.
  • 2 stir in uncooked rice.
  • 3 add broth and bring to a boil.
  • 4 reduce heat to low and cover. simmer until rice is done, about 20 minutes.
  • 5 fluff rice with fork and add pine nuts.
  • 6 season with salt and pepper.
