Leslie's Chunka Soba Noodles, Tomato And Basil With Feta

Ingredients
- Servings: 2
- 6 ounces soba noodles, cooked and drained (save 1 cup of the noodle water)
- 10 grape tomatoes, halved (about a cup )
- 1/2 cup basil, fresh thinly sliced (1 1/2 tsp dried basil leaves)
- 1 garlic clove, minced
- 1/4 teaspoon salt
- 1/4 teaspoon ground black pepper
- 4 ounces feta cheese, crumbled
Recipe
- 1 mix tomatoes, basil, garlic, salt and pepper with the cooked soba noodles. place in a large skillet, add half of the reserved noodle water and heat through.
- 2 add the feta cheese to the noodle mixture and add more of the noodle water, stir until the cheese melts into the pasta and makes a creamy sauce. it really does, believe me !
- 3 if you want you can serve topped with a few toasted pine nuts, some more fresh basil and some parmesan cheese. presentation is everything !
