Leslie's Chunka Soba Noodles, Tomato And Basil With Feta

Total Time: 22 mins Preparation Time: 20 mins Cook Time: 2 mins

Ingredients

  • Servings: 2
  • 6 ounces soba noodles, cooked and drained (save 1 cup of the noodle water)
  • 10 grape tomatoes, halved (about a cup )
  • 1/2 cup basil, fresh thinly sliced (1 1/2 tsp dried basil leaves)
  • 1 garlic clove, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 4 ounces feta cheese, crumbled

Recipe

  • 1 mix tomatoes, basil, garlic, salt and pepper with the cooked soba noodles. place in a large skillet, add half of the reserved noodle water and heat through.
  • 2 add the feta cheese to the noodle mixture and add more of the noodle water, stir until the cheese melts into the pasta and makes a creamy sauce. it really does, believe me !
  • 3 if you want you can serve topped with a few toasted pine nuts, some more fresh basil and some parmesan cheese. presentation is everything !
