Parmesan Rice

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 1/2 cups rice
  • 1/2 cup chopped onion
  • 1/4 cup butter or 1/4 cup oil
  • 3 cups boiling water
  • 1 cup wine
  • 3 tomatoes, chopped
  • 1 1/2 teaspoons salt
  • 1 dash pepper
  • 3/4 cup grated parmesan cheese
  • 1 cup pitted black olives

Recipe

  • 1 brown rice and onions in butter or oil.
  • 2 add 3 cups boiling water.
  • 3 cover. cook until rice is nearly done.
  • 4 add 1 cup wine, 3 tomatoes, chopped, 1 1/2 t. salt, dash pepper.
  • 5 cook 12 minutes. stir in 3/4 cup grated parmesan and 1 cup pitted black olives, sliced.
  • 6 heat thoroughly and serve.
