Parmesan Rice

Ingredients
- Servings: 4
- 1 1/2 cups rice
- 1/2 cup chopped onion
- 1/4 cup butter or 1/4 cup oil
- 3 cups boiling water
- 1 cup wine
- 3 tomatoes, chopped
- 1 1/2 teaspoons salt
- 1 dash pepper
- 3/4 cup grated parmesan cheese
- 1 cup pitted black olives
Recipe
- 1 brown rice and onions in butter or oil.
- 2 add 3 cups boiling water.
- 3 cover. cook until rice is nearly done.
- 4 add 1 cup wine, 3 tomatoes, chopped, 1 1/2 t. salt, dash pepper.
- 5 cook 12 minutes. stir in 3/4 cup grated parmesan and 1 cup pitted black olives, sliced.
- 6 heat thoroughly and serve.
