Pasta W/lemon Cream Sauce

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • 15 ounces low-fat ricotta cheese
  • 1 dash salt
  • 1 teaspoon grated lemon rind
  • 1 teaspoon nutmeg
  • 4 cups cooked pasta

Recipe

  • 1 empty ricotta into blender or food processor, using the steel blade.
  • 2 add salt.
  • 3 process until all graininess disappears and ricotta has the texture of thick whipped cream.
  • 4 flavor the mixture with lemon peel and nutmeg.
