Quinoa And Cucumber Salad

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1 cup quinoa, rinsed
  • coarse salt and pepper
  • 2 tablespoons red wine vinegar
  • 1 tablespoon olive oil
  • 1/2 english cucumber, quartered lengthwise and thinly sliced
  • 3 green onions, thinly sliced
  • 1/4 cup fresh parsley

Recipe

  • 1 in medium saucepan, bring quinoa and 1 cup salted water to boil. reduce to simmer, cover and cook until water has been absorbed, about 11-13 minutes.
  • 2 transfer to medium bowl and cool to room temperature.
  • 3 to quinoa, add vinegar, oil, cucumber, green onions and parsley.
  • 4 season with salt and pepper, toss to combine.
  • 5 serve at room temperature or chilled.
