Quinoa And Cucumber Salad

Ingredients
- Servings: 4
- 1 cup quinoa, rinsed
- coarse salt and pepper
- 2 tablespoons red wine vinegar
- 1 tablespoon olive oil
- 1/2 english cucumber, quartered lengthwise and thinly sliced
- 3 green onions, thinly sliced
- 1/4 cup fresh parsley
Recipe
- 1 in medium saucepan, bring quinoa and 1 cup salted water to boil. reduce to simmer, cover and cook until water has been absorbed, about 11-13 minutes.
- 2 transfer to medium bowl and cool to room temperature.
- 3 to quinoa, add vinegar, oil, cucumber, green onions and parsley.
- 4 season with salt and pepper, toss to combine.
- 5 serve at room temperature or chilled.
