Quinoa Salad 2

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • 100 g quinoa
  • 1 tablespoon fresh parsley
  • 1/2 sweet onion
  • 60 g carrots
  • 1 stalk celery
  • 1 green bell pepper
  • 1/2 teaspoon cumin
  • 2 tablespoons soy flour
  • 1/4 teaspoon garam masala
  • 1/2 teaspoon ground ginger

Recipe

  • 1 cook quinoa in stock or water, about 15-20 minute allow to cool.
  • 2 saute the onion, carrot, and celery until onions are clear.
  • 3 combine all the ingredients and spices and allow flavors to mingle 15 min or more prior to serving. can be served hot or cold and can be made ahead.
