Quinoa Salad

Ingredients

- 1/2 cup quinoa
- 1 cup water
- 1 medium fennel bulb, thinly sliced
- 2/3 cup mandarin orange
- 3 scallions, thinly sliced
- 1/4 teaspoon ground pepper
- 1/4 cup low-fat vinaigrette dressing
Recipe
- 1 rinse quinoa in cold water several times; drain.
- 2 combine the quinoa and water in a medium saucepan and bring to a boil.
- 3 reduce the heat and simmer, covered until the grains are tender and water is absorbed; about 12 minutes. remove the pan from the heat.
- 4 let the quinoa stand, covered, 5 minutes. transfer the quinoa to a large bowl.
- 5 add fennel, oranges, scallions, and pepper.
- 6 drizzle with dressing and toss gently to combine.
