Quinoa Salad

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1/2 cup quinoa
  • 1 cup water
  • 1 medium fennel bulb, thinly sliced
  • 2/3 cup mandarin orange
  • 3 scallions, thinly sliced
  • 1/4 teaspoon ground pepper
  • 1/4 cup low-fat vinaigrette dressing

Recipe

  • 1 rinse quinoa in cold water several times; drain.
  • 2 combine the quinoa and water in a medium saucepan and bring to a boil.
  • 3 reduce the heat and simmer, covered until the grains are tender and water is absorbed; about 12 minutes. remove the pan from the heat.
  • 4 let the quinoa stand, covered, 5 minutes. transfer the quinoa to a large bowl.
  • 5 add fennel, oranges, scallions, and pepper.
  • 6 drizzle with dressing and toss gently to combine.
