Quinoa Salad With Lemon And Mint

Ingredients

- 1 cup quinoa
- 1/2 cup finely chopped parsley
- 1/4 cup finely chopped mint
- 1/3 cup sliced scallion
- 1/4 cup raisins
- 2 tablespoons pine nuts
- 1 clove garlic, minced
- 2 teaspoons finely chopped lemon zest
- 2 tablespoons fresh lemon juice
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1 tablespoon olive oil
Recipe
- 1 in a medium saucepan, bring 2 cups water to boil. add quinoa and return to boil.
- 2 reduce heat to low, cover and cook until all of the water is absorbed, 15 minutes.
- 3 cool.
- 4 place quinoa in a medium bowl and add remaining ingredients. toss well with a fork to combine.
