Quinoa Salad With Lemon And Mint

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 8
  • 1 cup quinoa
  • 1/2 cup finely chopped parsley
  • 1/4 cup finely chopped mint
  • 1/3 cup sliced scallion
  • 1/4 cup raisins
  • 2 tablespoons pine nuts
  • 1 clove garlic, minced
  • 2 teaspoons finely chopped lemon zest
  • 2 tablespoons fresh lemon juice
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 tablespoon olive oil

Recipe

  • 1 in a medium saucepan, bring 2 cups water to boil. add quinoa and return to boil.
  • 2 reduce heat to low, cover and cook until all of the water is absorbed, 15 minutes.
  • 3 cool.
  • 4 place quinoa in a medium bowl and add remaining ingredients. toss well with a fork to combine.
  • 5 cover and refrigerate at least 2 hours before serving.
