Low-fat Linguine With Tomatoes And 'cream'

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 2 teaspoons olive oil
  • 1 cup chopped onion
  • 1 clove garlic, minced (or more)
  • 1 (1 lb) can stewed tomatoes
  • 1 teaspoon dried basil
  • 1/8 teaspoon pepper
  • 1/2 cup evaporated skim milk
  • 8 ounces linguine
  • 3 tablespoons grated parmesan cheese

Recipe

  • 1 heat oil in a large nonstick skillet over medium heat.
  • 2 add onions and garlic.
  • 3 cook 5 minutes, stirring frequently.
  • 4 add stewed tomatoes, basil, and pepper; bring to boiling.
  • 5 reduce heat to low and simmer, uncovered, for 10 minutes.
  • 6 stir in milk and continue to simmer 5 minutes more.
