Rice And Veggie Pilaf

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 1 teaspoon olive oil
  • 1/4 cup orzo pasta
  • 1 cup long grain rice
  • 2 1/2 cups chicken broth
  • salt and pepper
  • 1 small yellow onion, chopped
  • 2 stalks celery, chopped
  • 1/4 cup mushroom, chopped

Recipe

  • 1 heat oil in a pan over medium heat.
  • 2 add orzo and rice and cook until grains look clear.
  • 3 add chicken broth, salt, and pepper.
  • 4 bring to a boil.
  • 5 reduce heat, cover and simmer for 15 minutes.
  • 6 spray a separate pan with a little cooking spray.
  • 7 saute chopped vegetables for about 3 - 5 minutes.
  • 8 after the rice has finished cooking, mix sauted vegetables with rice.
