Rice With Lemon, Capers & Parsley

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1 cup rice, uncle ben's original long grain
  • 3 cups water
  • 3 tablespoons unsalted butter, divided
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper, finely ground
  • 1 tablespoon lemon juice, freshly squeezed
  • 2 tablespoons capers, drained
  • 2 tablespoons parsley, chopped

Recipe

  • 1 add rice to a large pan of boiling water.
  • 2 cook over high heat about 15 minutes, until just tender. watch carefully to prevent overcooking.
  • 3 drain and rise thoroughly.
  • 4 heat 1 tablespoon butter in a heavy skillet or pan over low heat. (i usually use same pan i used to cook the rice.).
  • 5 add rice, salt, and pepper.
  • 6 heat, stirring gently with a fork.
  • 7 stir in lemon juice, capers, and parsley and remove from heat.
  • 8 stir in remaining butter and adjust seasonings to taste.
  • 9 serve immediately.
