Linguine With Fresh Tomatoes

Ingredients

  • Servings: 4
  • 1 lb linguine
  • 3 garlic cloves, minced
  • 1 teaspoon red pepper flakes
  • 1/4 cup olive oil
  • 4 cups cherry tomatoes, halved
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup red wine vinegar
  • 1 pinch salt
  • 1/4 cup parmesan cheese, freshly grated

Recipe

  • 1 cook linguine in a large pot of boiling salted water until al dente.
  • 2 saute the garlic and red pepper flakes in the olive oil for 1 minute.
  • 3 add the tomatoes, basil, parsley, red wine vinegar, and salt; cook for about 5 minute.
  • 4 toss together the cooked linguine and tomato mixture in the skillet. add a little of the pasta liquid to make a sauce, if desired.
  • 5 sprinkle with the parmesan cheese.
