Linguine With Fresh Tomatoes

Ingredients

- 1 lb linguine
- 3 garlic cloves, minced
- 1 teaspoon red pepper flakes
- 1/4 cup olive oil
- 4 cups cherry tomatoes, halved
- 1/4 cup fresh basil, chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup red wine vinegar
- 1 pinch salt
- 1/4 cup parmesan cheese, freshly grated
Recipe
- 1 cook linguine in a large pot of boiling salted water until al dente.
- 2 saute the garlic and red pepper flakes in the olive oil for 1 minute.
- 3 add the tomatoes, basil, parsley, red wine vinegar, and salt; cook for about 5 minute.
- 4 toss together the cooked linguine and tomato mixture in the skillet. add a little of the pasta liquid to make a sauce, if desired.
- 5 sprinkle with the parmesan cheese.
