Quinoa Stuffed Peppers

Total Time: 1 hr Preparation Time: 1 hr

Ingredients

  • 2 tablespoons olive oil
  • 1 onion
  • 2 celery ribs
  • 1 tablespoon cumin
  • 2 garlic cloves
  • 10 ounces spinach
  • 15 ounces tomatoes
  • 15 ounces black beans
  • 3/4 cup quinoa
  • 3 carrots
  • 1 1/2 cups monterey jack pepper cheese
  • 4 bell peppers

Recipe

  • 1 cook onion and celery; add cumin & garlic. stir in spinach, tomatoes, beans, quinoa, carrots and 2 cups water. cook until quinoa is tender. add 1 cup cheese.
  • 2 preheat oven to 350°f fill each pepper with mixture, cover with foil and cook 1 hour. uncover, sprinkle with remaining cheese and bake 15 minutes.
