Quinoa Stuffed Peppers

Ingredients
- 2 tablespoons olive oil
- 1 onion
- 2 celery ribs
- 1 tablespoon cumin
- 2 garlic cloves
- 10 ounces spinach
- 15 ounces tomatoes
- 15 ounces black beans
- 3/4 cup quinoa
- 3 carrots
- 1 1/2 cups monterey jack pepper cheese
- 4 bell peppers
Recipe
- 1 cook onion and celery; add cumin & garlic. stir in spinach, tomatoes, beans, quinoa, carrots and 2 cups water. cook until quinoa is tender. add 1 cup cheese.
- 2 preheat oven to 350°f fill each pepper with mixture, cover with foil and cook 1 hour. uncover, sprinkle with remaining cheese and bake 15 minutes.
