Raisin, Rice And Carrot Salad

Ingredients
- 2 tablespoons mayonnaise
- 1/4 cup buttermilk
- 1/2 tablespoon cider vinegar
- 1 teaspoon honey
- 1 cup cooked brown rice
- 1 cup shredded carrot
- 2 tablespoons thinly sliced green onions
- 1/2 cup raisins
- 1/4 cup sunflower seeds (optional)
Recipe
- 1 measure mayonnaise into a medium bowl. slowly add buttermilk, whisking until smooth. whisk in vinegar and honey.
- 2 stir in rice, carrots, onion, raisins and sunflower seeds if using; mix well.
- 3 chill thoroughly, preferably at least 24 hours if possible.
