Ricotta Cheese Pancakes

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • 2 cups ricotta cheese, drained
  • 6 eggs, separated - egg whites beaten until stiff
  • 1/4 cup sugar
  • 6 tablespoons all-purpose flour
  • 1/2 teaspoon vanilla extract

Recipe

  • 1 beat egg whites to stiff peak stage.
  • 2 beat together ricotta, egg yolks, sugar, flour and vanilla in mixing bowl.
  • 3 heat greased griddle or skillet over medium heat.
  • 4 griddle is ready when a few drops of water bubble.
  • 5 gently fold in beaten egg whites into ricotta mixture.
  • 6 for each pancake, pour 1/4 cup batter onto hot griddle.
  • 7 cook pancakes until puffed, bubbly and dry around edges.
  • 8 turn and cook other sides until golden brown.
  • 9 serve with fresh berries.
