Farfalle With Tomato Herb Sauce

Ingredients

  • Servings: 2
  • 1 lb fresh farfalle pasta
  • 4 tablespoons olive oil
  • 1 garlic clove, crushed
  • 1/4 teaspoon pepperoncini pepper
  • 2 tablespoons fresh basil, chopped
  • 1 tablespoon fresh parsley, chopped
  • 4 tomatoes, peeled, seeded and cubed
  • 1/2 teaspoon oregano
  • 3 cups chicken broth (or vegetarians can substitute with vegetable broth)
  • 2 tablespoons butter
  • 4 tablespoons grated parmesan cheese

Recipe

  • 1 heat the olive oil in a pan.
  • 2 add garlic, peperoncino, basil, parsley and oregano.
  • 3 sauté on low heat, then add the tomatoes and half of the broth.
  • 4 add your fresh pasta and stir continuously adding the rest of the broth on medium heat until pasta is cooked and the liquid absorbed.
  • 5 dress with parmigiano and serve.
