Paglia E Fieno (straw And Hay) My Way

Ingredients

  • Servings: 8
  • 4 tablespoons butter
  • 1 medium onion, finely chopped
  • 8 ounces prosciutto, chopped
  • 2/3 cup baby peas (not canned)
  • 1 cup light cream (heavy cream can be used)
  • 2 gratings fresh nutmeg
  • salt and pepper
  • 3/4 cup parmesan cheese, grated
  • 1 lb linguine or 1 lb spaghetti, half spinach, half plain or 1 lb wheat

Recipe

  • 1 cook pasta as per directions while making sauce. saute onion in the butter until transparent. add proscuitto and cook for 5 minutes. add peas and cook for one minute (peas should be preheated). add the cream and cook for another 5 minutes, allowing the cream to thicken a bit. then add the salt, pepper and nutmeg. cook pasta to al dente. drain pasta and place in a warm bowl. add sauce and cheese and mix well. serve immediately. spaghetti or any other pasta can be substituted.
